Fuego at the Hotel Maya to Present Its May ‘Wine Dinner Series’ in Celebration of ‘Oregon Wine Month’

On Thursday, May 16 at 6 p.m., Hotel Maya will partner with Penner-Ash Wine Cellars, Gran Moraine and WillaKenzie Estate to present their May “Wine Dinner Series” celebrating “Oregon Wine Month,” hosted by Sir Michael Jordan, MS, CWE. Hotel Maya’s “Oregon Wine Dinner” will present Executive Chef Victor Juarez’s 5-course dinner pairing with Jackson Family Wines of the Willamette Valley beginning with a first course of Spinach Salad with young spinach, dates, Humboldt Fog Cheese, sunflower seeds and warm champagne dressing; paired with Gran Moraine Brut Rosé, Yamhill-Carlton, Oregon. The second course is Poached Salmon with sea urchin beurre blanc, oyster leaves and braised leeks; paired with 2021 WillaKenzie Chardonnay, Willamette Valley, Oregon. Served next is Maple Leaf Duck with pan-roasted duck breast, boysenberries, chard brioche and Ricotta cheese; paired with 2021 WillaKenzie Pinot Noir, Willamette Valley, Oregon. The fourth course presents Filet Mignon with charbroiled filet of beef, truffle wine emulsion, potato and onion terrine, and broccolini; paired with 2021 Penner Ash Pinot Noir, Willamette Valley, Oregon. The final course is Poached Per Vol au Vents Brûlée with honeycomb poached pear, aromatic herbs and vanilla Mascarpone Crème; paired with 2021 Gran Moraine still Rosé, Yamhill-Carlton, Oregon. “We are delighted to feature wines from Oregon during this month’s Wine Dinner Series in Fuego,” said Greg Guthrie, General Manager at Hotel Maya – a DoubleTree by Hilton. “Fuego Executive Chef Victor Juarez has prepared a delicious meal to bring out the best flavors by striking the perfect food and wine balance. With over forty years working in hospitality, Jordan holds both CWE and MS Diplomas; one of only 15 in the world to hold both. Jordan was Chairman and Chief Judge of the Los Angeles International Wine Competition for15 years and hosts the Kapalua Wine and Food Festival every year on the island of Maui, Hawaii. Fuego, the modern, Latin infused indoor-outdoor restaurant, and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating on the patio area.
