Hotel Maya Celebrates #MayaMania On Earth Day In Fuego With Sustainable Weekend Brunches And Earth Day Dinner

Fuego features Latin-inspired healthy dishes on Earth Day that is good for the planet and tasty too
Fuego Executive Chef Victor Juarez is taking it back to the basics for Earth Day in Fuego at Hotel Maya with sustainable dishes that celebrate climate friendly recipes for Earth Day weekend brunches on Saturday, April 20 and Sunday, April 21 from 11 a.m. to 4 p.m., and Earth Day Dinner on Monday, April 22 from 5-10 p.m.
Honoring Mayan culture, #MayaMania on Earth Day recognizes that while the Mayans may not have celebrated Earth Day as today, their ancient wisdom and respect for the Earth serve as a profound example of the importance of living in harmony with nature, a core value that Earth Day seeks to promote locally and globally.

Earth Day Weekend Brunches
Executive Chef Victor Juarez’s eco-friendly Earth Day Weekend Brunch menu features a variety of sustainable, delicious dishes and a few Fuego favorites that celebrate Madre Earth on Saturday, April 20 and Sunday, April 21.
Fuego’s Earth Day Shareables include Fuego Guacamole & Fire Roasted Salsa, fresh avocado, onion, chile serrano, lime cilantro, fire roasted salsa and tortilla chips; Grilled Veggie Quesadilla, roasted peppers, mushrooms, caramelized onions, calabasitas, shredded cheddar cheese and guacamole; Roasted Green Mussels, herbed tomato broth, garlic, spinach and grilled baguette; Cauliflower Wings, roasted Panko crusted cauliflower and Buffalo cream sauce; and Spicy Tortilla Soup, (gluten free) fire-roasted tomato, black beans, Guajillo Cotija cheese, cilantro and fried corn tortilla strips. Also available to share is Fuego’s Shrimp Ceviche.
Fuego’s Salad and On Bread Earth Day selections include Shredded Brussels Sprout and Kale Salad, red onion, figs, candied walnuts, heirloom tomatoes, and pomegranate balsamic; Heirloom Carrot Salad,tri-colored baby carrots, avocado, rajas, red onion, cilantro, crumbled feta cheese and lavender citrusvinaigrette; Avocado Toast, grilled rustic bread, olive oil, smashed avocado, red onion jam, tomato and arugula, for an additional fee add smoked salmon or pastured eggs; and Black Bean Burger, shredded lettuce, tomato, red onion, avocado, Brioche bun, fresh fruit or French fries. Additionally, guests may enjoy a Totopo Ahi Tuna salad.
Fuego Tacos include three soft corn tortilla tacos featuring an Earth Day Taco special with Portobello Salpicon, Portobello mushroom salpicon, watercress, red radish, avocado and salsa. In addition, Fuego offers Spiced Grilled Chicken and Grilled Fish.
Earth Day main entrées include Pastured Eggs Benedict, two pastured poached eggs, sweet potato cakes, artichoke heart, onion, spinach, asparagus, tomato and hollandaise; Earth Day Chilaquiles, Soyriso, fried corn tortillas, black bean purée, salsa roja, Serrano cream and pastured fried eggs; Pastured Adobo Chicken, pasture-raised chicken breast, Guajillo glaze, sweet potato yam and crispy Brussels sprouts; and White Truffle Risotto, crème fraîche, Parmigiano Reggiano cheese, spinach, mushrooms, black beans, roasted corn and pico de gallo. Additional entrées include Dulce de Leche French Toast, Ropa Vieja and Fillet of Salmon.
Earth Day Dinner
Recycled from the Earth Day brunch menu, the following sustainable dishes will be making a special appearance on the Earth Day Dinner menu along with Fuego favorites on Monday, April 22.
Cauliflower Wings, roasted panko crusted cauliflower and Buffalo cream sauce; Earth Day Chilaquiles, soyriso, fried corn tortillas, black bean purée, salsa roja, Serrano cream, and pastured fried eggs; and Black Bean Burger, shredded lettuce, tomato, red onion, avocado, Brioche bun, and fresh fruit or French fries.
Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating on the patio area.
