What do you get when you cross craft beer brewers, culinary expertise from Top Chef, and a massive mural dedicated to Long Beach’s past and present?

You get Taps + Taste at the Renaissance Hotel, where attendees get to enjoy brews from six local breweries, food from SIP Chef Janine Falvo paired with said beer, and music from none other than Live After 5 vets Black Noise—all for $20 come Thursday, June 16 from 5PM to 7PM, all a part of the Global Day of Discovery.

Featured breweries include The Dudes, Firestone, 10 Barrel, and Sierra Nevada, each of which will have one of its brews paired with Falvo’s distinct style. Think street corn rolled in Cool Ranch Doritos , pig ears with salsa verda, and lobster jalapeño poppers.

For those who haven’t experienced Falvo’s fantastic food, she has helped Renaissance fill a culinary void following the closure of famed Chef Suzzane Tracht’s 2007 venture Tracht’s and Chef Michael Poompan’s departure after lifting the lobby restaurant to new heights. Since then, Falvo’s style and youthfulness in approach have helped SIP reach new audiences and heights—and now she will stand side-by-side with her hops compadres and under one of the coolest murals in DTLB by local street artist Zach Howard.

“It’s been a ton of work,” Falvo said. “I’ve been at it non-stop but in the end, people have gotten it. We’ve always wanted Sip and its food to be its own thing for both guests and locals—and this event gets to show that off.”

Falvo is no stranger to the Renaissance family, having served as Executive Chef at Briza and Rooftop 866 at the Renaissance Atlanta-Midtown. There, she introduced the area to the popular farm-to-table concept that reigns supreme at Long Beach hubs like James Republic. Falvo also competed on Season 9 of the popular chef competition Top Chef.
